Step 1: Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
Step 2: Using an electric hand mixer, mix together the red velvet cake mix, oil, and eggs until they are combined well. Gently fold in the white chocolate chips and semi sweet chocolate chips until they are evenly combines. The dough should be sticky and thick.
Step 3: Cover the bowl with plastic wrap and put in the fridge for 30 minutes to an hour.
Step 4: Once ready to bake, scoop about 2 tablespoons of the cookie dough and roll it into a ball. Place cookies on the baking sheet at least 2 inches apart and if desired, place 2-3 white chocolate chips on top of each cookie.
Step 5: Bake for 8-10 minutes and remove from the oven. Cookies will still appear slightly soft in the middle, but let them cool for 5 minutes and they will be perfect!
Step 6: Transfer cookies to a cooling rack to cool completely or serve warm.
Our suggestion is to eat these delicious cookies with a glass of milk! As we said, they are the best way to end your night after a great meal with the family.
These cookies should be kept in an airtight container and will last for up to a week! We normally eat our batch way before the week is up! 🤫
